Aureole Las Vegas
Charlie Palmer is one of the super star chefs that put the United States on the culinary map. He started with Aureole in New York City which, for years, has been a benchmark of cutting edge culinary trend-setting. What would he, could he do with a restaurant of the same name in Las Vegas?
He upped the anti in every sense of the word. His dramatic, expansive space, located in the Mandalay Bay Resort and Casino, is known for its multi-storied wine tower complete with wine angels poised to fly up to retrieve your heavenly brew. His culinary team, headed by Executive Chef Vincent Pouessel from France, and Sommelier Adam Turner from South Beach, and his impeccably trained waitstaff from all corners of the globe enable Chef Palmer to leave his culinary legacy in good hands.
At Aureole Las Vegas, his signature progressive American cuisine is infused with the culinary creativity of Chef Vincent, so that the combination of the best Franco-American collaborations grace your plate.
The three course prix-fixe format or the seven course celebration tasting menu, with or without wine pairings are exceptional values. The award-wining wine list, overseen by Sommelier Adam ensures exciting wine pairings by the glass or bottle. The extensive and ever changing list is managed and accessed by laptop and stylus pointer with selections ranging from very affordable to high end splurge in vintage and price. The contemporary beat of well modulated background music adds just the right note of "hip vibe" to the sophisticated space without being intrusive.
All in all, Chef Charlie Palmer set the bar early on in the stellar Las Vegas culinary scene, and to his credit he still leads the pack!

In a casino-filled desert, flooded with high-end restaurant options, Sushi Roku rocks! This chic, contemporary space located in the Forum Shops at Caesar's Palace is worth tracking down. The Japanese-inspired cuisine is defined by flavorful surprises that set it apart from the many other sushi bars around town.
From a yellowtail ceviche-style sashimi-- spiced up with
ponzu chiles, hot olive oil and ginger-- to miso eggplant--sweet and
succulent as candy-- to creative sushi rolls that satisfy the umami
craving in us all, this is a restaurant that appeals to the newbie as
well as the sushi aficionado.
